In German data centres, and this is a very deliberate decision. Enquiries from relatives and applications from professionals regularly contain sensitive information, sometimes health-related. Such data is best kept in Germany and thus clearly under the GDPR and German law, without the uncertainties of data transfers to third countries.
There is also a practical advantage: hosting in Germany is not only legally clean but also fast and stable, because the paths between server and visitor are short. This benefits loading time, discoverability and the user experience alike. So a privacy-friendly decision coincides with a technically good one.
